How to Prepare Punjabi Samosas
To prepare the dough for the Samosa, Mix ajwain, ghee, salt and oil to the flour and slowly add water little by little to make the dough. Cover the dough and set aside for about 10 minutes.
For the filling, first make sure to boil the potatoes in a vessel of salted water. Once it is done, mash them up.
Next heat a pan with few teaspoons of oil. Add cumin seeds and crackle it. Now add ginger paste and green chillies to it and saute well.
Add mashed potatoes, Green Peas (boiled), Red Chilli Powder, Mango Powder, Garam Masala Powder and salt. Saute this mixture for about 5 mins before turning off the flame.
Divide the dough into 6 equal parts and roll them into ball. Using a rolling board begin to roll the balls to oval shape. But make sure to keep the edges neither too thick or thin.
Cut the oval shape dough into two semicircles and spread water on the edges of the dough to moisten the surface.
Make a cone using one of the semicircles created, while gently pressing the sides.
Fill the cone with 2-3 tablesppons of the filling prepared and seal the edges tightly by using your fingers.
The final step is to deep fry them in a large pot of oil in a medium flame.
